              Download and/or order materials related to the Dietary Guidelines 2005.   

 

Eating Right Is Basic - Enhanced

This curriculum guide is based on current food and nutrition recommendations of the United States Department of Agriculture, the Food and Drug Administration and other recognized national organizations. Using overviews and detailed lesson plans, it is useful for teaching low- income adults the basics of food nutrition and preparation with a limited budget. Besides lesson plans, information for the educators such as background knowledge, resources, and helpful hints for teaching productively, are also presented.

Fight Bac!®

Fight Bac! ® is a national consumer food safety education campaign that emphasizes four basic food handling behaviors:  cook, clean, separate and chill.  It provides consumers and professionals with information to promote safe food handling practices.  Lesson plans, consumer information and outreach strategies, teaching tools, and images of the Fight Bac! ® character can be downloaded or purchased from the website.

FNEC Lesson Plans

These lesson plans were developed by FNEC staff to integrate up-to-date nutrition information with a dynamic teaching style that incorporates principles of adult learning.

 

Youth Resources:

Cooking Up Fun! Series

The goals for the Cooking Up Fun! Series are to help children, ages 9 to 12, increase independent cooking skills, adopt healthy food choices, appreciate the science of cooking, and gain understanding about locally produced foods. These teaching tools were designed for 4-H clubs EFNEP, school-age child care programs, and other community effort to reach youth with nutrition information. To date, the following components in the series have been completed.

-A Pyramid of Snacks

    • The 75-page teaching guide features 16 recipes for easy-to-prepare snack; also included are games, science experiments, food activities, and information sheets. The 19-minute video features four of the recipes being prepared by youth working with culinarian Barbara Lang.

-Muffins & More

    • The 68-page teaching guide features 14 recipes for muffins and other quick breads. Additional food activities reinforce skills related to reading recipes, food safety, and food ingredients science. Also included are information sheets and forms to facilitate planning and evaluating the cooking sessions

-Yeast Breads

    • The 64-page teaching guide features 20 yeast recipes. A sample 6-session teaching plan includes more food activities to explore cultural history, ways of making dough, science, grains, nutrition, and creative fun.

    EatFit

    For ages 11-15.  A teachers manual, magazine-style workbook, and interactive website (www.eatfit.net) support a 9-lesson sequential program. The program uses computer technology to assist adolescents with self-assessment and guided goal setting.

     

    Jump Into Foods and Fitness

    Designed to integrate adult and teen volunteers, parents, professionals and others with children ages 8 to 11 to help them develop healthier lifestyles that will improve their overall health via physical and nutrition-related activities.
